		<description>Yep, my first all grain via the &quot;brew in a bag&quot; technique that&#039;s all the rage on HBT lately.  Worked fairly well but my efficiency was low.  I&#039;ll attribute that to a lot of fumbling around during brew day.  I&#039;ve got it all much better organized in my head for next time about how I should be doing things now that I&#039;ve done it once.

Thanks for the tip on the competition stuff...I had no idea.  Though in all honesty I&#039;m not worried about that sort of thing any time soon.  But I am really excited about the beer.  The hop schedule was definitely pretty awesome despite the gravity coming out a little lower than I&#039;d have liked.  I&#039;ve still got reasonably high expectations for this one...maybe as a session IPA or something.  Yeah, I just called what will likely be a 5.5% beer a &quot;session&quot; beer :)</description>

I read/heard from multiple places on HBT, etc that with Saisons you actually want to just ferment the entire batch at high temps because apparently that&#039;s what the yeast performs best at.  Like in the range you refer to...85-90 degrees.  I don&#039;t have a heating belt or anything to keep the temps but I did make zero effort to cool the beer and started it a little high.  I&#039;d say on average the carboy stayed between 75-85 through the duration of the fermentation and aging process.  Just bottled them on Monday and drank a tester on Friday.  Was pretty good but unfortunately not nearly as dry as a Saison should be.  Everything I&#039;ve read says you should get the FG down to insanely low numbers like 1.008 or something.  Mine stopped at 1.020 in the end and even after dumping some WLP001 in there and doing lots of swirling to re-suspend the yeast I couldn&#039;t get it to drop any further.  I gave up after 3 weeks and just bottled it.</description>

I like pitching on a cake, can produce great beers, only problem is you cant ever replicate them. Never stops me from doing it though :) Just dont do it for competition beers, generally DQs em.</description>
